Simple sauteed kale

Kale has taken the world by storm.

It’s green, it’s leafy, it fights cancer, it’s easy to prepare! Here is a great blog post by crossfitinvictus about why kale is wonderful. There are recipes on that blog as well as everyone online but I’m going to provide my own recipe, which is largely the same as any, for the sake of continuity ( I mentioned it as a side in an earlier post).

SIMPLE SAUTEED KALE     Ingredients: 5 oz study kale*, 1 tablespoon real olive oil**, 1 heaping teaspoon minced garlic, 3-4 rounds of freshly ground sea salt and pepper to taste

Place kale , olive oil, garlic, salt, and pepper in a saucepan. Use medium heat and saute until kale is a glorious bright green and still standing at attention (don’t let it get soggy).

That is it so prepare right before you are ready to serve/eat and enjoy!

*The quickest, most economical version is Trader Joe’s Organic Tuscan Kale. But, during farmers market season pick up a fresh bunch and chop when needed.

**The 60 minutes story exposing the Italian olive oil industry, complete with uniformed olive oil policemen, is not to be missed.
